Do not stack ten wats in a day. One Old City morning plus Doi Suthep is Chiang Mai at its best. Leave the sanctuary for a separate early start — it is a full outing, not a tick between lunch and a night market.
Walk the Old City wats
Wat Chedi Luang and Wat Phra Singh are the pair that matter. The moat is a square; you can walk it. Sunday Walking Street (if you are there on a Sunday) is the night-market version of the same streets. Go early for the temples; go after dusk for the stalls.
Climb Doi Suthep
The golden chedi on the ridge is Chiang Mai’s sacred viewpoint. 309 steps or the funicular. Entry is modest. Combine with an afternoon, not the same morning as an elephant park — the mountain road and the sanctuary sit in different directions.
Visit an ethical elephant sanctuary
No riding. No hooks. No circus tricks. Elephant Nature Park is the best-known rescue; others follow the same rule. You will spend the day feeding and walking, not posing on a neck. Book 2–4 weeks ahead from November to February.
Eat khao soi and take a cooking class
Northern curry noodles with a crispy topping are the dish you will not find done the same way in Bangkok. A half-day class (green curry, tom kha, pad see ew) is the useful souvenir. Nimman cafes are for the evening if the Old City feels finished.
Night markets, not a second capital
Chiang Mai Sunday Walking Street is the largest. Saturday has Wualai. Midweek, Nimman and small stalls still feed you. This is not Bangkok’s Yaowarat — and that is the point.
